Prawn Fried Rice

I think the most popular Chinese dish that everyone knows is Fried Rice. Fried Rice and Chili Chicken is the most popular combo in Kolkata, outside Biriyani and Kosha Mangsho. Heavenly and tasty. My sister loves fried rice, even more than the Biriyani, and it was mainly on her insistence we used to go for Fried Rice once in a while. Even on her birthday, mother made Fried Rice in the dinner. She is that obsessed with the dish. While Biriyani is more assorted and flavorsome, Fried Rice is a more preferable option for lunch / dinner..mainly because of it is subtle in taste and less richer in terms of the ingredients that is needed to make this. We also have Fried Rice as a lunch menu, simply because its a one pot dish and also Fried Rice is full and final on its own. You will only need this. And you will have a full stomach by the end of the meal.

I kind of made promise to myself that unless I can make a perfect and tasty fried rice,exactly like the one that is served in the restaurants I will keep trying. So, after almost 3 months of tryst and trying I kind of nailed the task. It is exactly like the one I used to eat back in Kolkata. This prawn fried rice is inspired from the Thai Fried Rice recipe shared in the show Marion's Thailand. I tried and tasted and voila!! I am going to try this in  mushroom, chicken and mixed version. Prawn Fried Rice
Serves 3

Ingredients:
  • 1 full cup Basmati / Jasmin Rice
  • 3 large eggs
  • 1 cup of prawns / 7-8 Tiger Prawns
  • 1 medium onion - sliced
  • 1 tsp ginger - grated
  • 4-5 garlic - minced
  • 2 bunches of spring onion - chopped
  • 1 carrot - julienned
  • 1/2 capsicum - chopped
  • 2-3tsp Fish Sauce
  • 1 tsp Soy Sauce
  • 1 tsp Oyster Sauce (optional)
  • salt
  • 1 tbsp crushed Black Peppercorns
  • 1 tsp sugar
Method:
  • Cook and strain the rice and keep aside.
  • Beat the eggs with  2 tsp water. The water helps to break down the bindings in the egg and make it more fluffy. Add a little salt and pepper and make scrambled eggs out of it. Keep aside.
  • Heat up oil in a yolk and fry the prawns until its cooked with a little salt and pepper. Keep aside.
  • In the same yolk add some more oil and put the garlic and ginger.
  • Sauté until the garlic starts to brown.
  • Now add the onions and fry the them until they are translucent. 
  • Next add all the veggies except the spring onions.
  • Add the sugar. It will help to remain the fresh colors of the veggies.
  • When the veggies start becoming tender add the scrambled eggs and fried prawn.
  • Mix well and take a little of the mixture out of the yolk. You can garnish with them.
  • Now add the salt and cooked rice.
  • Add the sauces and mix gently so that all the vegetable mix is mixed well with the rice.
  • Add the crushed black peppercorns. You can use the store bought black pepper but crushed black peppercorns give way better flavor than the store bought.
  • Mix it well too.
  • Put off the flame and add the grated ginger and chopped spring onions. Mix again and cover for 2 minutes.
  • Serve hot with the kept aside egg and prawns mixture on top.
