Avocado and Shrimp Salad
I am back with another Avocado salad. I am trying more and more of it as days are going by. A few months ago when we went to Bassam Beach I ate a dish there called "Avoca avec Crevette " which means "Avocado with Shrimps/Prawns". The prawns were mixed with a mayo based hot sauce and the mixture was put into the cups of the halved avocado. It looked interesting and I had my idea of making a salad.
I don't know what exactly the recipe was..so I recreated something that found good to my taste buds. Hope you will enjoy too.

Avocado And Shrimp Salad
Serves 2
Ingredients:
- 1 avocado
- 1/2 cup shrimps
- 1/4 cup sweet corn
- a handful of chopped coriander leaves
- 1tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 3 tbsp mayonnaise
- 1 tsp honey
- 2 tsp Tabasco sauce / red chili sauce
- salt
- pepper
- 2 tsp butter
Method:
- Peel and cut the avocados in small pieces.
- Heat the butter in a pan and sauté the shrimps in that butter with salt and pepper until they are cooked.
- When they are cooked add the sweet corns and sauté for some seconds before putting them in a bowl. Keep aside.
- Mix the mayonnaise, olive oil, lemon juice, honey and Tabasco / red chili sauce.
- Put the cut avocados on a plate.
- Sprinkle some salt and pepper on it.
- Mix the chopped coriander leaves with shrimp and sweet corn. Put this mixture over the avocado.
- Drizzle the sauce over the shrimps and avocado.
- Drizzle some olive oil too.
- Enjoy.
