Dal Diye Begun Pora / Charred Eggplant Mash with Lentils

I never knew that one can make a “begun pora” even with dal or lentils. I never had this particular eggplant dish ever in my life and only came across when I was reading “Amish o Niramish Ahar” by Prajnyasundar Devi. This book consists of numerous lost Bengali recipes as well as some recipes which were invented in the kitchen of the “Thakur Bari”. Macher Jhuri / Bengali Crumbled Fish Curry

I was more familiar with the concept of bata rather than jhuri. “Bata” is a dry curry resembling the consistency of a thick paste and can be made with any kind of fish or vegetable. The concept is very similar with “jhuri” but the process is rather simplistic. Just garlic and some spices, and that is all you need to make bata. But Macher Jhuri though similar in their attire consists of the entire curry making process with onion and garlic and tomatoes...if you are adding them, and the whole Bengali process of simmering on low heat for a long time, in short “koshano”.

Balti Chicken

It all started with some nostalgic moments owing its root to our very childhood. The strong feel for our Independence Day, imprinted upon us from our scool days is a hard one to pass. So, every year no matter what we do and how we feel...we visit the Indian Embassy to celebrate our Independence Day. This year also was not an exception. We reached Indian Embassy at sharp 8’o clock. Flag hoisting was followed by the presidential speech read by our Ambassador and a little programme, performed by some kids.

Frankly...I never liked beguni. I was always more of “alur chop” (potato fritters) person. So ma always bought samosa / singara or alur chop for me, along with beguni for the rest of the family. But yes...I have to accept...on a rainy day with a plate of hot runny khichuri its the beguni that matches perfectly and in the evening the same component becomes addictively tasty with a cup of milky tea.

During my college days I was obsessed over one dish...poached eggs. There is a small shaft near the ghat of Ganges in Kumartuli, which used to be our final stop after we spent the evening at the Ganges. With a little salt and pepper on top of it...it was a delicacy we barely missed. Served in a small steel plate with a steel fork, super hot wobbly double poached egg was something that seemed on top of the world.

Sylheti Chicken Curry

Although my mother and my late grandmother had a strong Bangladesh connection, I never ever went to Bangladesh. I grew up only listening to their “Bangal Bhasha” in home and eating their excellent food. They belonged to Dhaka and they used so say so many things and some local proverbs about different places of Bangladesh. One that I remember vividly was about the place “Borishal”, and the saying was like “aayite shal jaite shal, tar e naam borishal”, which literally meant the people of Borishal liked to trouble others. About Sylhet they said, their language was distinct. Only a sylheti could understand what another sylheti is saying. But now when I listen to a proper Banglal Bhasa, I can’t understand even that also!!

Malai Murgh / Chicken in a Creamy Curry

Malai Murgh is hearty chicken preparation with minimal spices and rich creams. I was going through a very old and perhaps one of the first Bengali and Indian cookbook, where I saw that in most of the preparations coconut milk was considered as the malai or cream. It might be because of the unavailability of the heavy cream in the market at that time or just that, at that time, people considered coconut milk as the cream or malai. Because even when it comes to the very famous Bengali Chingrir Malaikari / Prawn Malaikari, we see the use of thick high quality homemade coconut milk and not the heavy cream that we are so familiar with now.
