Nutty Brussels Sprouts Salad

Salads are my new findings that I am having a lot these days. This Nutty Brussels Sprout is a new addition to this. Besides I felt an urge to fill myself with greens after chasing chicken and lambs for a long time.:)




Nutty Brussels Sprouts Salad
Serves 2 as a side dish

Ingredients:

For the Salad Base:

  • 1 cup Brussels sprouts - shredded
  • 1 cup salad greens - cut into small pieces
  • 1/4 onion - thinly sliced
  • 1/2 of a small bunch of fresh coriander leaves - chopped
  • a handful of peanuts (you can use any nuts)
  • a handful of raisins
  • 1 tsp butter
  • salt
  • pepper
  • 1/4 cup grated Parmesan Cheese
For the dressing:
  • 1/4 cup extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • salt
  • crushed peppercorns ( you can use ready made black pepper. But the crushed ones give better flavors.)
Method:
  • Blanch the shredded Brussels sprouts for 5 minutes in boiling water. 
  • Drain the water and keep aside.
  • Heat butter in a pan and put the shredded Brussels sprouts into that.
  • Sprinkle salt and pepper.
  • Sauté until they are cooked and still crisp.
  • Now in a large bowl mix everything for the salad.
  • Keep some peanuts and Parmesan aside.
  • Mix everything mentioned for the salad dressing.
  • Drizzle them over the salad just before serving.
  • Put some peanuts over them with the rest of the grated Parmesan Cheese.
