Badam Milk
I made this drink a few days ago for my husband's friends who came for dinner. Actually I wanted to make Kesar Kulfi but I ran out of milk and hubby forgot to buy milk the previous day. Since I did not have time to freeze the Kulfi I thought of turning my recipe upside down since the ingredients were all same and it was too late to make something new for the dessert and I did not want to serve anything that came from outside my kitchen. Its a very simple drink and it takes minutes to make. The main time that is required here chilling. 30minutes in the freezer and its all set to serve.
Badam Milk
Serves 8
Ingredients:
- 1 liter milk
- 3 cups of heavy creme
- 2 cups of sugar
- 1 cup condensed milk
- a few strands of saffron
- 1/2 cup cashews
- 1/2 cup walnuts
- 1/2 cup almonds, 7-8 for garnishing
- 1/2 cup pistachios, 7-8 for garnishing
- 7-8 raisins
- 1 tsp crushed cardamom seeds
- a pinch of yellow food color - optional
- 1 tsp ghee
Method:
- Heat ghee in a saucepan.
- Now put all the nuts and raisins in there and roast for some time until they become a little brown. Do not brown them.
- Now put in the milk.
- Let it boil for at least 8-10 minutes. We need to reduce the milk a bit. Stir in between so that it does not burn in the button.
- Put in the creme, sugar, condensed milk, crushed cardamom and strands of saffron.
- Put them one after another, when the previous ingredient is totally mixed and dissolved in the milk.
- Once they are mixed properly put in the food color if you are using them.
- When the taste and thickness is good put the flame off.
- Let it cool.
- Then put it in a mixer and pulse it a few times.
- Do not pulse it much so that all that nuts become granules. They should be felt in the mouth.
- Now chop the rest of the nuts.
- Put the milk into the serving glasses and garnish with the chopped almonds and pistachios.
- Chill and serve when needed.
