Homemade Mayonnaise with Mustard and Garlic
I never felt the urge to
make my own mayonnaise because the necessity never aroused as such. And so it
never came to mind to at least try and make this really simple condiment and
spice it in my own way.
Homemade Mayonnaise is so
fresh and so much bursting with flavour that I am never going back to the store
bought jars anytime soon. Here is a simple recipe of that flavourful Mayonnaise
in case you are wondering why I am blabbering over such a simple thing. But
trust me and give it a shot. You just need a wire whisk (to ensure total control
over your mayonnaise), good quality extra virgin olive oil and 10 minutes of
your time. And that’s it. Thick, creamy and completely preservatives free
mayonnaise right in your home.
Homemade Garlic and
Mustard Mayonnaise
Makes around 300ml
Ingredients:
2 egg yolks
1 heaped tsp of French
Dijon Mustard / Whole Grain Mustard
3 fat pods of garlic –
minced / crushed
1 tsp white vinegar
Juice of ½ a lime
Salt & Pepper
1 cup of extra virgin
olive oil
Method:
Take a large bowl and drop
the egg yolks in it.
Add the mustard and start
whisking with a wire whisk until you see the mixture becoming pale and thick.
Start adding the oil in
little portions with one hand and keep on whisking with the other.
Keep on whisking and
adding the oil until the oil is finished.
Add the white vinegar and
lime juice and whisk again to mix.
Finally season with salt
and pepper and mince / crushed garlic.
Store in an airtight
container and keep it inside the fridge. Use within 2 weeks.
