Goat Cheese Pizza with Caramelized Onions and Olive
I just found out how
refreshing and filling veg pizzas can be if you do it proper to tickle your
taste buds. This goat cheese pizza with arugula and caramelized onions and
olive is perfect for a filling breakfast and I am still drooling over it.
Goat Cheese Pizza with
Caramelized Onions and Olive
Serves 3
Ingredients:
For the dough:
250gm of all purpose flour
plus more for dusting
a little more than 1 tsp active dry yeast
1 tsp sugar / honey
1 tsp salt
2 tbsp olive oil
For the Topping:
2 medium onions – thinly sliced
100gm goat cheese
Some olives
Olive oil to drizzle
Method:
Take ¼ cup of warm water
and add the yeast and sugar / honey to it.
Stir and let it sit for
about 15 minutes.
Take the flour in a large
bowl and pour the yeast mixture into it.
Add the olive oil and salt
and mix until you have a rather sticky dough.
Transfer this dough to a
flat dusted working surface and start kneading with the back of your palms,
until you have a smooth round ball of non-sticky dough.
Place this dough in a
large bowl and drizzle some olive oil over it.
Cover the bowl with a
cling film and let it prove for 2 hours.
After 2 hours, the dough
should be double in size.
Take the dough again on a
dusted working surface and knead again for 3-5 minutes.
Place it again inside the
bowl and let it sit covered for 30-45 minutes more.
Heat some oil in a pan and
add the sliced onions to it.
Sprinkle some salt over
the onions and cook the onions on low flame until they become nicely golden.
Take them out of the pan
and place on a kitchen towel.
Preheat your oven at 450F
and get your pizza stone inside it.
Take the dough and flatten
with your fingers or using a rolling pin.
Transfer the dough on the
pizza stone and cook for 5-6 minutes.
After 5 minutes, scatter
the caramelized onions on top of the pizza bread.
Scatter the olives and the
goat cheese.
Drizzle a generous amount
of the olive oil and cook for 10-12 minutes more or until the crust is golden
and crisp.
As soon as the pizza comes
out of the oven place the arugula on top of it and drizzle some olive oil.
Cut into triangles and
serve immediately.
