Spanish Chorizo and Potato Curry
I find this chorizo and
potato curry very relaxing and different. Mainly because chorizo is very
different in taste. With potatoes and tomatoes they create a beautiful dish
which requires so little of time. If you are looking for an easy
going food, then this chorizo and potato curry should be the one for you.
Step by step process:
Heat oil and the garlic paste. |
Saute for half a minute. |
Add the chopped onions and let them them sweat. |
Add the chopped tomatoes to them. |
Add thyme, salt, pepper, bay leaves, dry red chilli. |
Add paprika / red chilli powder. Cook for 2 more minutes. |
Add the sliced chorizzo to them and fry them for 2-3 minutes. |
Cook until the potatoes are cooked and then mash them a little. |
Spanish Chorizo and Potato
Curry
Serves 5
Ingredients:
300gm Spanish chorizo sausage
– sliced in ½ inch thick pieces (I fry them a little before cutting because
that gives me firm pieces.)(Pick the raw version of chorizo which needs to be cooked)
2 or 3 medium potatoes –
peeled and washed
2 tomatoes – chopped / 4
tbsp of tomato paste
2 onions – finely chopped
2 tsp paprika / chilli
powder
2 dry red chillies
1 whole green chilli
1 tsp fresh ground black pepper
½ tsp thyme
2 medium bay leaves
4-6 fat garlic cloves –
minced / paste
Salt
2-3 tbsp of white oil
Method:
Heat the oil and sauté the
minced garlic in it for half a minute or until they start to become brown.
Now add the chopped onions
to them and cook them until they become translucent.
Add the tomatoes, bay
leaves, dry red chillies, whole green chilli, thyme, salt and pepper and cook until the tomatoes
become pulpy and curry like.
Add the paprika / chilli
powder and cook for 2-3 minutes more.
Now throw in the sliced
sausages and fry them well.
Cook them for 2-3 minutes.
Now take a potato and make
a small cut using a knife and slightly give upward pressure on it to break that
piece of potato from its body. Follow this process until you finish all of
them.
Add 1 and ½ cup of water
and put cover.
Cook until the potatoes
are cooked completely.
Mash the potatoes a little
with the back of a spoon and simmer until the curry thickens.
Taste and adjust the
seasonings.
Finish off with some chopped
coriander leaves and serve hot with bread or rice.
