Chocolate Pound Cake
Who doesn't love a good moist chocolate cake???? But that is the problem with the chocolate cake, they become dry very easily and almost always needs a frosting to get away with that. We are a house of pound cake lovers. So why not a chocolate pound cake then???? A few trials and errors...and I ended up with this delicious cake recipe that I have repeated quite a number of times in my home. My son and S both love them...and regardless to say I eat the first slice as soon as it is cold enough.
This chocolate cake is fudgy, dense, buttery and incredibly moist. This does not need any frosting and can be eaten in the breakfast with a tea or a coffee with ease.
Chocolate Pound cake
Serves 8 thick slices
Ingredients:
3/4 cup of full fat cow milk
1 and 1/2 tbsp lemon juice
1 cup and 1/4 cup of a.p.flour
1/2 cup dutch processed cocoa powder
1/4 tsp baking powder
3/4 tsp baking soda
1/4tsp salt
30gm 60% dark chocolate
20gm semisweet chocolate
1/3 cup unsalted butter
3/4 cup white granulated sugar
1 tsp vanilla
2 tsp instant coffee / espresso powder
2 large eggs
Method:
Lukewarm the milk and add the lemon juice to it. Stir and keep aside.
Chop the semisweet chocolatevinto small bitesize pieces and dust them with a little flour. Keep them inside the fridge.
Microwave the dark chocolate in batches of 30 seconds until completely melted.
In a large bowl start beating the butter and sugar together.
Once the butter starts to become pale and fluffy add the eggs one after another, giving each of them time to blend completely.
When the batter is pale and fluffy and has doubled in size, add the melted chocolate, instant coffee powder and vanilla extract to it.
Beat until completely mixed.
Seive the flour and cocoa powder in a seperate bowl.
Add the baking soda and salt to the flour.
Add milk and flour in alternate batches to the batter.
Scrap the sides from time to time to have an evenly incorporated batter.
By the time you finish the batter should look like velvetty and fudgy melted chocolate.
Butter and line an 1 pound loaf pan with baking paper.
Pour the batter into the loaf pan.
With the help of a spatula even the surface.
Scatter the chopped and dusted chocolate all over the surface of the batter.
Bake in a preheated oven at 350F for about 40 minutes or until a skewer inserted comes out clean.
Let it cool down on a baking rack before cutting into slices.
