Omelette with Spinach and Goat's Cheese

It was not recently I discovered the beautiful salty and creamy goat's cheese and how well it can be paired with spinach and eggs. Eggs are my primary source of protien in my diet mostly because they are versatile and they take insanely small amount of time to cook. Put goat's cheese, garlic, spinach together in the skillet...and that omelette is something you will relish and this spinach omelette with goat's cheese will soon becone your go to meal.

How to make spinach omelette, eggs with spinach

Omelette with spinach and goat's cheese
Serves 1

Goats cheese recipe

Ingredients:
2 large eggs
2 cloves of garlic - finely minced
50gm goat's cheese
A handful of fresh spinach leaves - roughly chopped
Salt & pepper
A few dashes of hot sauce
2 tbsp extra virgin olive oil

Method:
In a pan pour the oil and add the garlic to them.
Put the flame on low.
Break the eggs in a cup and vigorously whisk them with a spoon.
When the garlic starts to sizzle add the spinach leaves to them.
Sprinkle salt and stir them to mix everything.
After 2-3 minutes when the spinach leaves are wilted pour the eggs on top of them.
Mix gently with the spinach.
When the eggs start to settle scatter pieces of goat's chees on top of it and cover.
Cook covered for another 2-3 minutes.
Serve it on a plate.
Crack some black pepper on top of it.
Splash some hot sauce.
Enjoy with toasted bread.
