Quick Mini Apple Pies
Being a pathetic baker I
find short cuts really handy. Such a short cut is these quick mini apple pies.
Apple Pie with filo pastry right!!! Who knew?? With a crispy crust this quick
apple pie is all what you need to meet your sudden sweet cravings. I
mean...they are perfect!! I like them even more than the traditional pies. The
traditional pie is richer and fuller...and perfect for formal occasions.
But this little mini pies are perfect as appetizer and some go to friends' get
together. Once you make them....I guarantee that you will go back to them more
than you should.
Quick Mini Apple Pie
Serves 3
Ingredients:
3 apples
½ cup brown sugar
4 filo pastry sheets
1 tbsp cinnamon powder
4 tbsp butter
A pinch of salt
Method:
Peel and chop the apples.
Take all the apples in a bowl and add in the sugar, cinnamon powder and salt.
Mix them well and keep
aside.
Take a saucepan and place
it on the stovetop. Put the flame on low and add 2 tbsp butter to the saucepan.
As the butter melts add
the sugar and apple mixture into the saucepan.
Start stirring and you
will see the sugar caramelizing and apples becoming soft.
When the mixture starts to
bubble switch off the flame and transfer the apples to a bowl. Keep aside.
Take the filo pastry
sheets and cut each one of them into 4 equal parts.
Take one square and brush
it with melted butter and place another square on it in a way that they look
like a star. Brush this square as well and place another one on it. Follow this
step with the last one as well.
Now you have a layered
star like frame.
Place a little of that
apple pie filling in it and tug all the edges together and seal them with a
little water giving it a potli / parcel kind of look.
Place this parcel in one
of the greased muffin tin.
Follow the same method
with the other sheets as well until you are finished with the pie filling.
Pop this muffin tray into
the oven for about 7-10 minutes at 325F.
Serve it hot with a little
sprinkle of caster sugar or a big scoop of vanilla ice cream or just a drizzle
of maple syrup.
