Dosa Quesadilla
The newest member of our
family...our 1 month old kitten is quite a nagging one and insists on sleeping
on my lap only. His mother is one free mamma...who has zero care for her child
and now a days....she even runs just at the sight of him. So...barely a month
old kitten is all my responsibility and just a few days ago he had a bad diarrhea. We had to take him to the vet where he was given 3 injections and some
meds. He became stable from the evening and we all took a deep breath of
relief.
I was literally smelling
of cat poop and vomit and was way too upset to cook anything for us.
Luckily we had some dosa batter in the fridge and to skip the sambar and all...I
told my maid to make dosas with some cheese. Surprisingly they were good and a
few days later I made that recipe again. These cheese Dosa Quesadillas are as
good as they sound. Creamy bubbly melted cheese, sandwiched between two dosas...I
mean it can’t get any better!!!
Make two dosas and sprinkle the chopped onions, chillies and coriander leaves on them. Spread the butter and take them out of the pan when they are brown and crisp. |
While the seconds dosa is still being cooked, load it with the cheese and more chillies and coriander leaves if you like. |
Place the first dosa on top of the second dosa and wait until the second dosa is cooked and crisp. |
Dosa Quesadilla
Serves 2
Ingredients:
2 ladles of dosa batter
½ of a small onion –
finely chopped
A few fresh coriander
leaves – chopped
1 green chilli - finely chopped
2 tbsp butter – softened
¼ cup of grated mozzarella
¼ cup of grated cheddar
Salt
1 tbsp oil
Method:
Grease the pan and wait
for it to become piping hot.
Sprinkle a little water on
the pan and if the water turns into vapour right away your pan is ready.
Spread one ladle of dosa
batter on the griddle pan and spread it towards the outer circle in a circular motion. As the dosa batter starts to settle drizzle a little oil around the edges.
As the dosa becomes crisp
add 1 tbsp of the butter on it and as it melts spread it all over the dosa.
Take the dosa out of the pan and keep aside.
Follow the same method
with the other ladle of dosa batter.
When the second dosa is
half cooked sprinkle the chopped onions and coriander leaves.
Add the grated cheese all
over the dosa and wait for them to melt.
As the cheese melts and
start to bubble take the kept aside dosa and place it on top of the dosa with cheese, on the stove top.
Press a little with a
slotted spoon and switch off the flame.
Place your dosa on a
cutting board and cut into triangular shapes.
Serve immediately with
your favourite sauce.
