Salmon Avocado Salad
Ingredients:
1 large fillet of Salmon (200gm)
1/2 of a ripe avocado
1/2 of a small onion - chopped
A handful of chopped tomato
1/2 of a small cucumber chopped
A handful of coriander leaves - chopped
1 soft boiled egg
A handful of toasted cashew nuts
1/4 cup of couscous
For the dressing:
2 tbsp olive oil
Juice of 1 lime
Salt & pepper
1 tsp honey
1 tsp dijon mustard
1 clove of girlic
1/4 tsp dry red chilli pepper flakes
1 tbsp mayonnaise
For the fish marinade:
1/4 tsp turmeric powder
1/4 tsp red chilli powder
1 tsp tandoori chicken masala / or any spice mix of your preference
Method:
In a bowl take the couscous and mix in some salt.
Boil 1/2 cup of warm and pour it in the bowl right away.
Cover and leave it at the kitchen counter for 15 minutes.
Prepare the fish:
In a bowl take the fish and sprinkle the turmeric powder, red chilli powder and the tandoori chicken masala.
Gently rub the spice mix all over the fish and leave it for 15 minutes.
After 15 minutes, fry the fish in a pan with olive oil, cooking each side for 5 minutes.
Once done, take it out of the pan and spread it with the help of a fork.
Prepare the salad dressing:
In a jar take all the ingredients for the dressing and shake well.
Prepare the salad:
In a bowl take the avocado, onion, cucumber, tomatoes and coriander leaves.
Pour the salad dressing over the avocado and mix well.
Finally add the couscous, cashew nuts and shredded salmon in it and give a final toss.
Serve the salad on a bed of greens.
