Cilantro Lime Chicken Skewers

As quick as it is to cook a chicken breast, it is even easier to spoil it while cooking. Without any fat in it, the chicken breasts are easy to overcook and they therefore become hard and chewey like rubber, which frankly speaking is the least enjoyable. But if you do not overcook, chicken breasts are soft and they make the best of skewers. To avoid making them stiff, baste them with ghee or butter continuously and do not cook them more than 4-5 minutes at tops. 
This cilantro lime chicken is an easy recipe but it bursts with flavour in every bite. Takes only a few minutes to prep, chicken skewers can't be any easier than this.

Cilantro lime chicken recipe

Cilantro lime Chicken Skewers
Serves 2

Ingredients:
2 chicken breasts
A big bunch of coriander leaves
1/4 cup of greek yoghurt
Juice of 2 limes
6 cloves of garlic
1/2 tsp whole black peppercorns
1 tsp garam masala powder
1/2 tsp sugar
2 tbsp mustard oil
1/2 tsp coriander powder
4-6 green chillies
20 gm Butter / ghee to baste
1 tsp black salt

Mrthod:
In a blender blend together the coriander leaves, garlic, green chillies and greek yoghurt.
Cut the chicken cubes into bite size pieces.
Dump the chicken cubes into the coriander leaves-yogurt paste.
Add the mustard oil, 1/4 tsp garam masala powder, salt, coriander powder, crushed black pepper and the juice of lime.
Marinatethem for at least an hour.
When you are ready to cook, put the chicken cubes into the skewers.
Fry them on a hot pan cooking each side for about 2 minutes and basting them regularly.
Serve them hot with a sprinkle of black salt, garam masala powder and pickled onions, with a side of chilled yogurt.
