Simple Garlic Pasta / Pasta Aglio E Olio
This simple Garlic Pasta
popularly known as “aglio e olio” is a killer. You can make this anytime and literally
anywhere!! The pungent and yet not over the top garlic smell is the star of
this show and it can slay almost anyone. A regular in my home, I just love how
a few ingredients can make such a wonderful dish in no time.
Simple Garlic Pasta
Serves 1
Ingredients:
2 cloves of garlic –
finely sliced
50gms of pasta of your
choice
Some flat leaf parsley –
finely chopped
½ tsp red pepper flakes
2-3 tbsp extra virgin
olive oil
A little freshly grated parmiggiano-reggiano
Salt & pepper
Method:
Start cooking the pasta in
a pot full of boiling water seasoned with generous amount of salt.
When the pasta is almost
cooked heat some olive oil (keep a little to drizzle while serving) in a
skillet and add the sliced garlic to it.
Switch the flame to low
and cook until the garlic slices start to become golden.
Add the cooked pasta
straight from the pot of boiling water to the skillet, and thus add some of the
cooking water to it as well.
Switch the flame to medium
high and add salt & pepper and red pepper flakes.
Simmer for a minute or two or until everything coats the pasta perfectly and the starchy pasta water thickens to a sauce like consistency.
Add the chopped parsley and grated parmiggiano-reggiano (keep some for serving in the end) and toss well.
Switch off the flame.
Serve immediately with a little drizzle of olive oil and some grated parmiggiano-reggiano on top of it.
