Frozen Yogurt Berry
Popsicle
Makes 8 popsicles
Ingredients:
1 cup of thick yogurt
1 cup of frozen mixed
berried
¼ cup of condensed milk
1 tsp vanilla extract
1 and ½ cup of sugar
A pinch of kosher salt
Method:
Whisk the yogurt until it
becomes nice and smooth. Make sure that there is no lump in it.
Add in the condensed milk
and vanilla essence. Stir until well combined.
Throw in all the berries
in a blender and blend until smooth.
Pour these blended berries
into a saucepan. Add the sugar.
Place the saucepan on the
stovetop and switch on the flame. Simmer until the sugar melts and the mixture
becomes bubbly.
Switch off the flame and
let this mixture run through a sieve to get rid of the seeds. Keep aside until
it comes to room temperature.
Take the popsicle mould
and pour some of the berry mixture and the yogurt mixture in alternate layers.
Freeze them for half an
hour and then stick a stick inside the moulds.
Freeze until firm or
overnight.
To take out the popsicles
from its mould, hold the mould under running water for 10 seconds and then pull
out the popsicle from it.
Serve and eat immediately.
