Raisin Bread
Ingredients:
- warm milk 1 cup
- warm water 1/2 cup
- butter 1/4 cup
- sugar 1/4 cup
- active dry yeast 2 1/4 tsp
- All purpose flour 4 cups
- Kosher salt 1 1/2 tsp
- 2 large eggs
- oil to grease
- 1/2 cup golden raisin
Method:
- Mix the warm milk, water, butter, sugar, yeast until they dissolve. Leave it for 15 minutes for the yeast to bloom.
- Add flour and salt to the liquid and mix with a spatula until mixed evenly.
- Knead them with both hands, with the back of your palm, until the dough becomes stretchy.
- Grease a big bowl with oil and transfer the dough to it. Cover the bowl with a damp kitchen towel or cling film and let them rise for an hour or until the dough doubles in size.
- After the dough doubles in size, punch it down and knead again.
- In the end add the raisins to the dough and knead to mix them evenly.
- Divide the dough in two equal sizes.
- Take one dough and knead it to smooth it out. Gently give them an oblong shape and transfer it to a greased and lined loaf tin. Follow the same step with the next dough.
- Cover them again with a damp kitchen towel until they rise double in size.
- Give them an egg wash before popping them inside the oven.
- Bake them in a pre-heated oven at 375F for about 30-35 minutes or until the bread has turned golden brown from outside.
- Once baked take them outside the oven and let them cool down a bit before taking them out of the loaf tin. Cool them on a cooling rack until they come to room temperature before cutting.
