Mango Lassi Popsicles
The easiest way to make a frozen yogurt popsicle is this one. Mango lassi popsicles. The mangoes provide creaminess, along with the yogurt, which will give you the best kind of posicle. The perfectly creamy popsicles....not ice and not a creamsicle..something in the middleground. And the process to make a perfect mango-yogurt popsicle is as easy as it can be.
Serves 6
Ingredients:
2 large ripe mangoes
2 cups of greek yogurt
1/2 cup of sugar
4 green cardamoms (ground them in a morter and pestle to a fine powdered texture)
A handful of pistachios - coursely chopped
A few saffron strands
2 tsp rose water
Method:
Peel and chop the mangoes.
In a blender blend the mangoes until smooth and creamy.
When they are perfectly smooth and creamy add the yogurt, sugar, ground green cardamom powder, saffron strands and rose water.
Blend until all the ingredients are perfectly combined.
Add the chopped nuts and mix with a spatula.
Pour them in kulfi or popsicle molds.
Freeze for 8-10 hours.
Take them out of the freezer for about 10 minutes before serving so that they can slide off their molds easily.
