Tomato Tart
I have been eating tomatoes with feta for a long time. I first saw it in a Nigella Lawson show and from then on it became the perfect combination. Such simple ingredients, and you get a burst of flavour in the end. Love it....everytime I make it.
Tomato Tart
Serves 4
Ingredients:
1 pizza dough made with 1 cup of flour
2 tbsp of olive oil
2-3 ripe big tomatoes - cut into slices
4 gatlic cloves - cut into rough bits of pieces
100 gm feta
Salt & pepper
3 garlic cloves
More olive oil to drizzle
Method:
Pour some olive oil in your square 8/8 inch baking pan.
Stretch the dough inside the pan. If it resists let it sit for 10-15 minutes more and then try again.
Once stretched, let it sit for arpund 30-40 minutes or until the dough appears puffy.
Scatter the slices of tomatoes on top of the dough.
Crumble some feta on top.
Sprinkle the garlic as well.
Sprinkle salt and pepper.
Drizzle some more olive oil
Bake in a pre-heated oven at 350 F for around 15-20 minutes or until the edges start to become golden and crisp.
