Spicy Chicken and Peach Salad
I always make salads sans vinaigrette!!! In place of that I use a small drizzle of olive oil, lime juice, salt & pepper. I, on the other hand concentrate on making the ingredients of the salad a little stardy. In that way there is a symphony of flavours in each bite of it. For my chicken salad, I make the chicken spicy, think tandoori chicken. And I pair it with sweet fruits, crunchy nuts and fresh lettuce and other veggies.
Spicy Chicken and Peach Salad
Serves 3
Ingredients:
1 large chicken breast
1 medium red onion - thinly sliced
1 small cucumber - cut ibto small pieces
A handful of cherry tomatoes - cut into halves
A handful of fresh coriander leaves - finely chopped
2 ripe peaches - cut into slices (or you can use any sweet fruit of your choice. Strawberries, kiwi, mangoes, apricots, plums any sweet and juicy fruit will be great.)
Juice of 2 limes
1 tsp garam masala powder
1 tbsp yogurt
1/2 tsp cumin powder
1/2 tsp turneric powder
1/2 tsp red chilli powder
1 tsp ginger - garlic paste
A few almonds
Some raisins
1 tbsp olive oil
Salt & peppera
A few lettuce leaves
Method:
Marinate chicken breast with yogurt, salt & pepper, garam masala powder, cumin powder, turmeric powder, chilli powder, juice of 1 lime and ginger -garlic paste, for at least an hour.
Cook the chicken breast in oven for about 20 minutes at 350F, or until it is nicely tender.
Once cooled down cut the chicken breast into small bite size pieces.
Tear the lettuce leaves with your hand into small bit size pieces.
Throw them in a large mixing bowl.
Add in the sliced onions, cherry tomatoes, chopped cucumber, almonds, raisins, coriander leaves, sliced peaches, cooked and chopped chicken breast.
Drizzle the olive oil.
Squeeze in the juice of the lime.
Sprinkle salt and pepper.
Give everything a light toss.
Serve immediately.
