Shrikhand
2020 is reaching it's end...and so far It's been one of the worst years of my life. Lockdown, panic attacks, stress, depression....I have been through almost all of it this year thanks to the covid 19 epidemic. There is crisis every where, and yet...life goes on.
I haven't been in my best moods and health lately, but one has to eat to stay alive...and that is what I have been doing. Staying alive. But when the waves pass and the sunshine catches my glimpse...even in my worst, I try to get up and make something sweet.
My little one loves anything sweet. Thanks to him our fridge is overloaded with chocolates and cookies and ice creams...and what not!!
Shrikhand is easy to make and is so delicious even just on its own. And even the ingredients for Shrikhand are easily available in the house. And shrikhand can be easily gobbled down as a snack. So I give Ishaan shrikhand as a snack with fruits and it keeps him full for the whole evening.
Shrikhand
Serves 2
Ingredients:
1 big square piece of cheesecloth. Big enough to make a potli of yogurt with it.
2 cups of yogurt
4 tbsp white sugar
Some saffron strands
2 green cardamom - skin discarded and ground into fine powder
A few mango pieces
Some pistachios
2-3 almonds
Method:
Spread the cheesecloth on a strainer.
Put the yogurt on tge cheesecloth and tgen tightly tie it like a potli.
Hangbit overnight or at least 8-10 hours on the kitchen tap, or anywhere you find it comfortable so that the excess whey can drain and you will end up a thick creamy yogurt.
Or else you can use storebought greek yogurt to save some time.
When the yogurt is prepared tge next day add in the sugar, ground cardamom, saffron strands.
Whisk it vigorously to mix everything properly and then pop it inside the fridge for at least 4 hours.
When needed sereve it chilled with almonds and pistachios on top and with mangoes and pomegranate pearls or the any fruit of your choice.
