Potato Patties
These crispy potato
patties are great with coffee or tea or just on their own in the evening. You
can also make them to go with khichdi or daal-rice. A delightful preparation
when you want something other than mashed potato or potato fritters.
Potato Patties
Makes 8 patties
Ingredients:
2 large potatoes
1 medium onion – finely chopped
1 thumb size ginger root –
finely minced
2-3 green chillies –
chopped
¼ cup of boiled green peas
A handful of chopped green
peas
2 tsp bhaja moshla
½ tsp amchur powder
A pinch of black salt
1 tbsp room temperature
butter
½ tsp coarsely ground
black peppercorns
2 tsp rice flour
Salt
Oil to fry
Method:
Wash the potatoes well and
poke them a few times (all over them) with a fork.
Boil the potatoes in
salted water until they become fork tender.
When the potatoes are
cooked, drain the water and let them come to room temperature.
Peel their skin off and
mash them preferably with a riser or masher to make a smooth mash.
Add in the salt, black
salt, amchur powder, black pepper powder, bhaja mosla, boiled green peas, chopped
green chillies, chopped coriander leaves, chopped ginger and rice flour.
Mix them thoroughly with
your hand make some thick round patties. Smooth off the edges and give them a
good shape.
Heat oil in your frying
pan and shallow fry them for about 3 minutes until they become crisp and brown.
Flip them and cook the other side for 2 minutes again.
Once they are done take
them off the pan and serve hot with some sour cream or ketchup, sprinkled with
some black salt and bhaja moshla and a squeeze of lime.
