Honey and Hot Sauce Skewered Chicken
These hot and spicy, sweet
and sticky chicken skewers are perfect for the weeknights. Since these days I
am too tired to cook even a regular legitimate meal...easy way outs have become
my favourite. Although I hate taking shortcuts....(trust me a wailing child
will make you love everything you hate...until and unless you see him well fed
and smiling and playing without any fuss) I have no other way.
So...I came out with this
chicken skewers which are easy to whip up. Generally I ask my house help to do
the preps...and when I can finally have some time I cook them. They are easy
and full of flavours...and this homemade hot sauce just makes a world of
difference.
Honey and Hot Sauce
Skewered Chicken
Serves 4-5
Ingredients:
5 boneless chicken thighs –
cut into bite size pieces
1 medium onion
2 garlic cloves
1 inch ginger root
¼ cup of the hot sauce
½ tbsp dark soy sauce
2 tbsp honey
1 tbsp brown sugar
1 tbsp melted butter
1 tsp garam masala
(optional)
Salt & pepper
Some chopped parsley and
toasted sesame seeds to garnish
Oil to fry
Method:
Make the sauce:
In a sauce pan throw in
the hot sauce, honey, brown sugar, soy sauce, melted butter and salt &
pepper. Stir them on low to medium flame until the sauce thickens. Switch off
the flame and pour the sauce in a bowl to come to room temperature. Once they
are ready cover the bowl with a plastic film and keep aside.
Make the marinade:
Make a paste of the onion
and squeeze out the juice in a bowl.
Discard the residue or you
can use them for making kebabs or meatballs.
Make a very fine and
smooth paste of the ginger and garlic. Add that to the onion juice as well.
Add in the garam masala
and salt & pepper.
Now add the cut boneless,
skinless chicken thighs.
Wrap the bowl with a
plastic film and let them marinade for 4-6 hours.
When you are ready to cook
just put the chicken pieces into the skewers (if you are using bamboo skewers
then soak them in water for about 10-12 minutes before using).
I use a griddle pan to
make the chicken skewers...but you can use normal frying pans as well.
Brush some oil over the
pan and when the pan is smoky hot lay your skewers on them. Cook each side for
3-4 minutes, and when they are done just brush the prepared sauce over them
generously.
Serve with some chopped
parsley and toasted sesame seeds sprinkled on top of them.
