Mango and PassionFruit Popsicle
With the approaching summer...a
homemade popsicle can be your one true friend!!! Those juicy summer fruits are
the best catch for making popsicles. And what can be better than some fresh
juicy mangoes and passion fruits??
Mango and Passion Fruit
Popsicles
Makes 6-8 medium popsickles
Ingredients:
4 ripe passion fruits
1 medium ripe mango
1 cup of sugar
2 cups of water
Juice of 1 lime
A pinch of sea salt
A pinch of rock salt
A handful of fresh mint
leaves
1tsp ginger paste
Process:
In a saucepan put together
the sugar and water.
Put the flame on low to
medium and let it come to a boil.
Simmer for 7-8 minutes and
then check the consistency of the syrup. If poured from a spoon the syrup falls
in a single string your syrup is ready. Switch off the gas and transfer the
syrup in a bowl and let it come to room temperature.
Cut the passion fruits and
scoop out their flesh. Pass them through a fine mesh or sieve to extract their
juice. Collect the juice in a bowl and keep them aside.
Peel the skin of the mango
and cut their flesh. Blend the mangoes to make a puree and then pass them
through a fine mesh or sieve to discard the fibres.
Collect the mango puree in
a separate bowl.
Once the syrup comes to
room temperature mix the passion fruit juice and mango puree with it.
Add a sprinkle of sea salt
to cut through all the sweetness.
Add the rock salt.
Roughly pound the mint
leaves and add them to the syrup as well.
Finally add the ginger and lime juice to
them.
Stir everything and leave
this mixture inside the fridge for a good 4-6 hours.
After 6 hours strain the
liquid to discard the leaves and the ginger.
Pour them in popsicle molds
and freeze overnight inside the refrigerator.
