Pizza Sauce
If you love homemade
pizzas then you must always need a good pizza sauce. Pizza sauces can be downright
simple with just the flavour and seasonings from garlic and pepper and overly
complicated with different spices, herbs and wine and so on. In my pizza sauce
I have used anchovy fillets, which I read in
many placed gives a pack of flavours and caraway seeds for that intense
earthy note. In my opinion if pizza sauce becomes overly intense in flavours it
kind of messes the tastes of the toppings.
Pizza Sauce
Makes 200gm of sauce
Ingredients:
1 can of peeled tomatoes
3 ripe tomatoes – chopped
5 cloves of garlic – paste
2-3 tbsp grated parmigiano reggiano
3-4 chopped fresh sweet basil
leaves
2 green chillies – chopped
(adjust according to your heat tolerance)
3 fillets of anchovies
1 tsp dry chilli flakes
½ tsp ground caraway seeds
1 tsp oregano
2 and ½ tbsp extra virgin
olive oil
Salt and pepper for the
seasonings
Method:
Take a saucepan and add
the olive oil and garlic paste and the anchovy fillets in it.
Slowly heat up the oil and
sauté the garlic and anchovies for half a minute or until the garlic starts to
become golden.
Immediately add the
chopped up tomatoes to it.
Sprinkle some salt over
them and cook the tomatoes until really really mushy.
When you see the oil separating
add the canned tomatoes to them.
Add the fresh basil
leaves, oregano, ground caraway seeds, salt and pepper and stir to mix.
Switch the flame to low and
simmer the sauce for 15-20 minutes, or until you see the oil separating.
Add the grated parmigiano reggiano and chilli flakes.
Stir until the cheese
dissolves with the sauce.
Taste and adjust the
seasonings.
Switch off the flame and
let the sauce come to room temperature.
You can use the sauce
right away or you can keep it in an air tight container. Store inside the
refrigerator and use within a month.
