Steamed Egg
One of the first recipes that I learnt when I started to
cook was this beautiful creamy steamed eggs recipe. I made some gravy noodles
with chicken that day and this steamed egg went so well as a side dish. But later on I made
steamed eggs only for our breakfasts. Canned chicken stocks are readily
available in the super markets and so...its super easy to make this dish in the morning.
Just put everything in the bowl inside the microwave and as you make
coffee...your steamed eggs will be ready just like that.
I add a little curry powder that I bought from the
Lebanese market to the eggs as well. When cooking non-Indian dishes, this curry powder adds a little subtle spiciness to the dish, compared
to the hotness that comes from adding the cumin, coriander and other spices separately.
I also add a handful of chopped onions and a hell lot of chopped green
chillies to the eggs. Sometimes I also add some chopped corianders too!! And they all make a very filling breakfast on a
cold morning...what say???
And do add the thick cream...because it makes so much of
a difference. It makes the steamed eggs more like a rich salty custard and you have this
melt in the mouth feel...which will definitely not happen if you skip the
cream. Also be a little generous when you buy the cream...the heavy cream with
35% butter content gives a much more richer taste than the ones which are fat
free! So be generous this winter...and make the most of it. It’s only a few
months in the whole year...so make the most of it!!
Steamed Eggs
Serves 3
Ingredients:
4 large eggs
1 and ½ cups of chicken broth
2 tbsp of thick cream
1 small onion – chopped
A handful of spring onions – chopped
2 green chillies – chopped
½ tsp curry powder (optional)
Salt & pepper
Method:
In a microwave proof bowl mix in the chicken stock, cream,
onions, green chillies, curry powder, salt and pepper.
In a separate bowl break and whisk in the eggs.
Put it in the microwave on high heat for 3-5 minutes
until it starts bubbling. Once it starts to bubble take the bowl out and mix in
the whisked eggs.
Put it again in the microwave and bake on high heat for
3-4 minutes. Do have an watchful eye on the eggs. As soon as the eggs firm up
switch off the microwave and take the bowl out it.
Sprinkle some salt and pepper and chopped spring onions
on top of it and serve hot.
