Simple Rustic Chicken Soup

Everybody has his / her chicken soup recipe. This one turns out to be mine. A little rustic, slightly tangy from the tomatoes and full of vegetables. 

Simple chicken soup recipe

Chicken Soup
Serves 3

Ingredients:
4 chicken legs
1 red onion - thinly sliced 
2 large tomatoes
1 head of garlic - minced / paste
1 tbsp grated ginger 
1 large carrot - cut into medium size pieces
2 medium potatoes - cut into cubes
A big handful of green beans
Half of a medium size green papaya - cut into small cubes
200gm of pasta of any shape
1/4 cup of butter / ghee
Salt & pepper
1/2 tsp roasted cumin seeds
1/2 tsp roasted coriander seeds
3 whole green cardamom
1 bay leaf 

Rustic chicken noodle soup

Easy chicken noodle soup recipe

Method:
Pour the butter or ghee in a big pot.
As the butter melts and starts to sizzle place the chicken pieces skin faced down. Sprinkle some salt on them and let the skin become brown.
Throw in the green cardamoms (bash them a little before throwing in), bay leaf, tomatoes and onions together inside the pot and cover the pot with the lid. 
Turn the gas on low and let them sweat. Give them toss and turn every once in a while and when the onions turn translucent and the tomatoes become jammy, throw in garlic and ginger.
Stir and cook until their raw smell diminishes a little. Now add the vegetables to the chicken and submerge the with water. Let the water come to a boil and cover the lid. If you are using pressure cooker, cook it until it gives 3 whistles.
Once the pressure settles down open the cooker and take out the chicken.
Shred the chicken into small bite size pieces and throw them inside the soup again.
 Add the raw uncooked pasta and cook until they are tender.
Finish with more butter and the roasted cumin, coriander seeds and a lot of black pepper.
Serve piping hot and enjoy!!!!
