Simple Chicken Soup

 One of the few perks of having chicken in the freezer is that it comes handy when someone is sick. No matter whatever the sickness is, a simple and warm bowl of chicken soup never fails to liven up the sick morbid tastebuds and let us feel alive again. This very simple chicken soup is frequent in our house because it is easy as hell and comes together in just 10 minutes (if you have a pressure cooker). But if I am not in such short time crunch I simmer it on low flame and let it boil for two hours straight. It can not get easier that this. Can it??

Simple Chicken Soup
Serves 4

Ingredients:
2 chicken legs
some chicken feet ( nicely washed and cleaned)
carcass of a chicken 
2 onions
1 large carrot
1 head of a garlic
A few black peppercorns
Salt
2 tbsp corn starch
3 eggs
A handful of fresh coriander leaves - chopped
Butter for serving

Method:
In a pot put together all the ingredients (except butter) with 1.5 litres of water.
Simmer covered, on low to medium flame for about 2 hours, skimming the foam from the top layer from time to time.
If you are using pressure cooker, pressure cook on medium flame until the cooker blows 10 whistles.
Let the pressure release naturally.
Once the chicken is ready take out the chicken legs and keep them separately in a plate and separate the flesh from the bones. Then cut the chicken pieces into very small pieces.
Run the chicken stock through a sieve and transfer the stock to another pot.
Boil the soup for another 30 minutes uncovered, and then add the chicken pieces to them.
Adjust the seasoning with salt and pepper.
In a cup mix the corn starch with some water until properly diluted and slowly pour it in the soup.
Mix and wait for the soup to thicken.
Break the eggs in a cup beat them.
Give the soup a nice swirl and pour the beaten eggs in circular motion. Wait for 30 seconds and then stir the soup again.
Boil the soup for another 2 minutes and then switch off the flame.
Serve the soup hot with a blob of butter, chopped coriander leaves and cracked black pepper on top.
