Rose Lassi
Lassis require no
introduction. And this easy peasy recipe is the reason...I crawl back to it
more than I crawl back to the readymade bottle of lemonade. And with a drizzle
of rose syrup and some pistachios...it simply becomes the nectar from heaven in
a glass!!!
Rose Lassi
Serves 2
Ingredients:
1 and ½ cup of thick
yogurt
2-4 tbsp rose syrup (if
you don’t have rose syrup then just use rose water. In that case you have to
use sugar and you will not have that beautiful pink colour. But trust me the
taste will be same.)
2 green cardamoms
Some slivered pistachios
to garnish
Sugar – as per taste
Chilled water 1 cup or
more if required
Method:
Dry roast the green
cardamoms for some seconds and then let them cool down. Peel off their skin and
take out their seeds. Put them in a mortar and pestle and grind to a fine
powder.
In a blender put together,
the yogurt, 2 tbsp of the rose syrup, ground green cardamom powder and 2 tbsp
of the sugar. The syrup already contains sugar so don’t go overboard.
Blend them until they are
all mish-mashed.
Now taste and add more
rose syrup or sugar or water, as required.
Blend until you see the
mixture become frothy.
Take glasses and pour in
some rose syrup around the edges...and pour in the lassi.
Garnish with some slivered
pistachios and serve immediately.
