I am totally exhausted right now. Lying on my bed, currently I am finding it very hard to keep my eyes open, even for one more minute. But I have to give you the good news. Today, one of my cats gave birth to 5 awesome cute kittens. Its a very good news. I helped her throughout the entire process, cleaned her, cleaned her kittens as well....but then, she abandoned her kittens entirely on me. Too bad. Too bad. Now she is not feeding them or even licking or warming them up. So to solve the problem, I have put all the kittens in a basket with some worn out clothes of ours. Then we have put a lamp over them to keep their body temperature balanced. Now I just pray, they survive on this cow milk, that I am feeding them right now. Because I was unable to find any kitten milk solution in the nearest vet store.

Although all those kittens barely have furs on them, they will look utterly cute in just2-3 days. The only sad news in this entire scenario is that, one of the kitten is born with twisted legs. She is all okay now, but I have to take proper and special care for her once she grows up. Now that I have given the good news, lets wrap up.

Paneer Roll used to be my favorite street food option in Kolkata on those vegetarian days, when I used to feel an urge to have some street foods. Its mildly spicy and filled with soft juicy paneer. I think...these two features are enough to get your tongue tickled. Paneer Tikka Kathi Roll has now become more favorite these days since I can make them exactly like those fast food centres. Paneer Roll or Paneer Tikka Kathi Roll
Serves 4

Ingredients:
For Paneer Tikka :

  • 150gm cottage cheese / paneer - cubed
  • 2-3 garlic cloves
  • 1/2 inch stick of ginger
  • 2 tbsp thick yogurt / greek yogurt
  • 1 tsp cumin powder
  • 1 tsp corainder powder
  • 1/2 tsp chaat masala
  • 1/2 tsp fenugreek powder
  • juice of 1/2 lemon
  • 1 tsp garam masala powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 2 tsp mustard oil
  • salt
For the Dough:
  • 1 and 1/2  cup all purpose flour
  • 2 tsp oil
  • a pinch of salt
  • water to knead the dough
For assembling the paneer roll:
  • 1 medium onion - sliced
  • 1 medium cucumber - Julienned
  • 1 capsicum - julienned
  • 2 green chillies - chopped
  • 2 tsp chaat masala
  • juice of 1 lemon
  • 2-3 tbsp tomato sauce
  • 2-3 tbsp green chilli sauce
  • 1-2 tbsp red chilli sauce
  • salt
  • a handful of fresh coriander leaves - finely chopped
Method:
  • Mix all the ingredients required to make dough without water. Slowly add water and mix in. Add water until all the flour is finely incorporated and it takes the form of a rough puff pastry. Then start kneading until smooth. If needed add some more oil to it. Once done, put cover with a damp cloth and keep aside.
  • Prepare the marination for the paneer tikka by mixing all the ingredients listed under the title panner tikka. Create a smooth paste using a wire whisk. Now put in the cubed paneer pieces and let them marinate for 10 minutes maximum.
  • If you like then you can put the marinated paneer on skewers and then fry. Or if you don't have skewers then fry just like that. If you are using bamboo skewer then soak them in water for at least 10-15 minutes, to prevent them from burning while frying.
  • Fry the paneer tikkas on each side for 10-15 seconds. Then flip and fry the other side. Once the four sides are done take them away from the pan and keep aside.
  • In the same oil add half of the sliced onions and all of the capsicums. Sauté on high heat until the onions become translucent and soft. Once done, keep aside.
  • Now take the already prepared dough. Make 3-4 balls of equal portions from the dough. Give smooth and round shapes with the help of your palm. Dust some flour on them and  make thin and round chapati using a rolling pin. Usually this dough makes 3 large chapatis. You can fry the chapatis in little oil too. 
  • Now assemble the roll. Take a chapati. Place your preferred amount of paneer there. I generally put 5-7 medium pieces. Put some fried onion and capsicum. Then put the sliced fresh onion and cucumber. Drizzle some lemon juice. Sprinkle some chopped coriander leaves, chaat masala, green chillies and salt. On them lather some tomato sauce, red chilli sauce and green chilli sauce. Wrap up the chapati and cover the half with some kitchen towel or tissue paper or aluminium foil. Serve immediately.
